Choosing the Right Chicken For Chicken Soup Recipe

Whole Chicken:

  • Using whole chicken is a popular choice for making chicken soup recipes. It provides a rich flavour and yields tender meat.
  • Opt for a fresh whole chicken from a reputable source. Look for a plump chicken with smooth, unblemished skin. It should have a pleasant, clean smell.
  • Consider the size of the chicken based on the quantity of soup you want to make. A 4-pound chicken is a good starting point for a standard-sized pot of soup.

Chicken Parts:

  • You can also use specific chicken parts for your soup, such as chicken breasts, thighs, or a combination. This allows for more control over the type and amount of meat you include.
  • Bone-in chicken parts, such as chicken thighs or drumsticks, can add extra flavour to the broth. They release gelatin as they cook, resulting in a more flavorful and hearty soup.
  • Boneless chicken parts are a good option if you want a leaner soup or prefer less fat in your broth.

Homemade Chicken Soup Recipe

1. Place chicken, carrots, celery, and onion in a large soup pot; add enough cold water to cover. Bring to a boil over medium heat; reduce heat to low and simmer, uncovered, until meat falls off the bone for about 90 minutes. Skim off foam every so often, as needed.

2. Remove chicken from the pot and let sit until cool enough to handle; chop meat into pieces, and discard skin and bones.

3. Strain out vegetables, reserving the stock; rinse the soup pot and return the stock to the pot. Chop vegetables into smaller pieces; return chopped chicken and vegetables to the pot.

4. Warm soup until heated through; season with salt, pepper, and chicken bouillon to taste.

Chicken Soup Recipe

1 tbsp olive oil
2 onions, chopped
3 medium carrots, chopped
1 tbsp thyme leaves, roughly chopped
1.4l chicken stock
300g leftover roast chicken, shredded and skin removed
200g frozen peas
3 tbsp Greek yoghurt
1 garlic clove, crushed
a squeeze of lemon juice
cheese scone to serve

Heat the olive oil in a large heavy-based pan. Add the onions, carrots, and thyme leaves, then gently fry for 15 mins.

Stir in 1.4l chicken stock, bring to a boil, cover, then simmer for 10 mins.
Add the leftover roast chicken, remove half the mixture, then purée with a stick blender. Tip back into the pan with the rest of the soup, the peas, and seasoning, then simmer for 5 mins until hot through.

Mix the Greek yoghurt, garlic, and lemon juice together. Ladle the soup into bowls, swirl in the garlic yoghurt, then serve.

If you want to use a slow cooker, gently fry the onions, carrots, and thyme leaves for 15 mins, then tip them into the slow cooker with 1 litre stock. If you’re using a chicken carcass, add it now.

Cover and cook for 2-3 hours on High until the veg is tender. If you used a carcass, remove it now, shredding any remaining chicken from the bones.

Stir back into the soup, or add the leftover roast chicken and frozen peas. Cook for 30 mins more. Remove half the mixture and purée with a stick blender, then serve as above.

FAQs

What gives the chicken soup the most flavour?

The best spices to use in chicken soup are paprika, onion powder, and garlic powder. Chicken’s salty flavour goes well with herbs like bay leaf, thyme, parsley, and coriander.

How to make soup better?

Brown or Sear the Meat
If you are adding meat to a soup, sear or brown it in a sauté pan before adding it. This adds a deeper savoury flavour to the whole soup.
Roast the Veggies
Similar to searing meat, try roasting your vegetables before adding them to the soup. This gives them a little bit of char and concentrates their flavour, giving the soup a more complex taste.
Mix up the Texture
Mash or puree some vegetables in your soup to give it a creamy texture while still having some chunky bits, or puree the whole thing for a silky-smooth experience.
Use Homemade Stock Whenever Possible
It’s possible to develop flavours as you go with just water and whatever ingredients you are using, but if you have it handy, use homemade stock.
Put Your Cheese Rinds to Work
When you’re down to the last nub of that block of Parmesan, Pecorino, or other hard cheese, freeze it and toss a rind or two in the pot the next time you’re making soup.
